Having recently spent an excellent evening up at Jackson Hole Mountain Resorts mid-mountain restaurant, Piste Mountain Bistro, I am inspired to encourage others to do the same. There are many reasons why you should, but here are the five most important reasons that should encourage you to get a reservation during the short summer season.

#1: This drink.

The Sandia Picante is a mildly spicy, watermelon tequila concoction that is rimmed with the Mexican spice, Tajin. It is the perfect beginning to your evening. There is also a full menu of wine and local beers to choose from if you want to experiment with a few.

#2: Because it is a short season and you don’t want to miss out!

While Piste Mountain Bistro is open for lunch all winter long, during the short summer season in Jackson Hole, you only have from mid-June until mid-September to get up there for this elevated dining experience. It is open every night for dinner except Monday, but remember reservations are important and there are occasional closures for private parties, so make your plans with Open Table.

#3: The food.

Whether you are craving fresh tuna, lamb on homemade pasta, duck or halibut cheeks, you will be in for a culinary treat. Each dish is prepared with extra attention to what is fresh, local when possible, and curated in a way that is sure to make you remember it. Unusual pairings and seasonings on each dish will offer something you haven’t tried yet anywhere else in town.

#4: Summer salads.

Chef Michael Britton has relationships and farm shares with area growers and knows how to highlight simple ingredients. This salad of shaved seasonal vegetables is served on top of homemade ricotta that is extra creamy and rich because it is strained for 24 hours. It was hands down the best salad I have eaten all summer.

#5: Because it makes a great date!

Not only do you take a break from the crowds in town, but you also get to relax while you take the gondola ride up the mountain. When you arrive at dinner you are treated to sweeping views, cooler temperatures and you have hopefully unwound from the busy day during the scenic trip. Nothing is rushed and you can savor dessert while you enjoy the sunset.
