Chef Wes Hamilton - Overseeing food from the Kids Ranch to Couloir at Jackson Hole Mountain Resort
Gaining influence from the pristine environment around him, Chef Hamilton makes a fervent effort to use local and fresh ingredients. He is constantly researching the environmental practices of his vendors to ensure the most sustainable and eco-friendly food possible, not to mention the tastiest in the region.

Signature Dishes
House Smoked Tenderloin of Buffalo
Brined for 24 hours in Port and Red Wine, we then cold smoke the buffalo over applewood chips before roasting it whole. Served with a puree of cauliflower with white truffle, the dish is finished with a natural veal stock reduction fortified with Madeira wine. The buffalo is then sprinked with fresh black pepper and Fleur de Sel.

Le Trois Saveurs-A Seasonal Dessert Tasting
Our Signature Dessert Tasting changes weekly according to the seasons, produce availability and the inspiration of our pastry chef. We understand that choosing a dessert is always a hard decision, so why not get a taste of all three?
